I think this is a great idea, but I purchased one of these "lettuce" knives a few years ago for my own children and while demonstrating to my (then) seven year old daughter how to cut lettuce-of all things-with it, the knife slipped and I cut myself badly-almost needed stitches. When I was telling my father (who is an expert in all types of knives) he told me that the lettuce knives can actually cut skin easier than a metal blade and go deeper.
Since then I've disposed of the lettuce knife and my children use small paring knives to help cut. At six and ten they haven't cut themselves yet-and neither have I.
