Quick meals with microwave-ready rice

Go-Go RiceFrom Stefania, who knows her food:

GoGo organic rice makes my life easier.  You can buy it from Amazon Grocery in a variety of flavors (I like plain and brown) and from Asian markets.  It cooks in 90 seconds in the microwave and makes a quick, healthy meal.  I like to top it with toasted seaweed sprinkles (nori furikake) or serve alongside leftovers.

Mmm. FYI, I've also seen microwavable already-cooked rice at Trader Joe's. GoGo is packaged as a shelf-stable rice bowl, whereas the Trader Joe's rice comes frozen in a plastic packet.

It's a heck of a lot less expensive to just make and chill/freeze a bowl of rice and cook it with vegetables. You can make a dollar's worth of rice and another dollar's worth of broccoli/peas/carrots last a week of lunches.

Our daughter's favorite is -- get this -- rice and broccoli. A little salt and sometimes a little soy or teriyaki sauce and she's downing it whole hog.

I can vouch for the Trader Joe's rice-and you can get it in wgite or brown!

Cooked rice freezes beautifully! I learned this from one of the Iron Chef guys (via a magazine article.)

We keep Trader Joe's jasmine and brown rice stocked in our freezer for fast meals. Love it!
