Another good thing to map out on your path is libraries with good children's rooms - they might be a little bit away from the highway, but if you need a place for kids to be kids for a while it's a good bet.

My family always travels with maps to local science museums. We are members of our hometown museum, and most places honor the membership.
The kids get a place to stretch their legs and brains, clean toilets, and often a cafe to augment the travel PBJs.
